The coconut, ginger, turmeric and cauliflower stew is amazing

This amazing stew is tasty and good for vegetarians and meat eaters too. It is loaded with healthy fats, warm, tasty and we all can enjoy it. Add tofu or chicken for protein if you wish. If you prefer grains, add wild rice.


You need:

  • 2tbsp coconut oil
  • 1 tsp cumin seed
  • 1 onion chopped
  • 3 ripe tomatoes, chopped
  • 1 cauliflower head, stemmed and cut
  • 1 jalapeno, seeded and chopped
  • 1 cup kale, shopped
  • 3 tsp ginger paste
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 1 can, full-fat coconut milk, no sugar
  • 1 tsp sea salt
  • 2 tbsp cilantro, chopped


In a medium pot, heat the coconut oil for half a minute using medium heat. Then, add the cumin seeds to sputter. Add onions and cook for 60 seconds, add tomatoes and mix nice to make them softer. Add everything else and stir. Cover up the pan and let this simmer for 15 min. stir every 5 min to avoid burning.

Serve this in 4 bowls and enjoy. The leftovers can be in a container and refrigerated.
