Another baked recipe, no fried food here. This is adjusted by Damn Delicious and their recipe for cauliflower bites, her fried food looks amazing, but a baked version is much healthier.
I got olive spray for the panko batch batter before baking. The spray made this easier to coat it later in all shapes and angles.
Baked garlic and parmesan cauliflower bites
Prep time: 20 min
Cook time: 10 min
Total time: 30 min
3-4 cups cauliflower florets
1 tsp garlic powder
½ cup flour
2 eggs, beaten
½ cup parmesan
1 cup panko crumbs
2 tbsp olive oil
Salt and pepper
OPTIONAL: ¼ tsp cayenne pepper
Cook the cauliflower until crispy and soft. The steaming needs 6-8 minutes, so cook it in microwave for 4 minutes if you like. Let the cauliflower be nice cooked on touch.
Preheat the oven to 450 F and mix flour, garlic, cayenne, then coat the cauliflower in this mix, sift it a few times and flip/toss.
Mix in the panko crumbs and cheese on a tray dish. Dip the cauliflowers in the beaten eggs, then dip them in the panko and cheese mix. Press them nice.
Arrange the cauliflower on the tinfoil baking sheet and drizzle spray olive oil. Bake for 10 min until brown.
